This weeks mushroom is “Lion’s Mane”. They are featured on our Pizza of the month, the “Mayfly”. This is a MUST try, it’s so delicious. Nice job Chef Brandyn! Our mushrooms come from our friends at #gemstatemushrooms right here in Coeur d’Alene, Idaho. We will be using Blue Oyster, Lions Mane, Brown Oyster and other varieties not harvested yet. The Mayfly is topped with mushrooms that are first cooked to perfection in a butterfly garlic, thyme and salt and pepper base in the Brick-oven. The Mayfly is created with an olive oil base, shaved Parmesan, feta, cheese blend, carmelized onions and finished with fresh basil and house made whipped lemon ricotta.
